Cockles
Fished in the upper Adriatic several miles from the coast using a turbocharged dredger, the cockles arrive at the Euroittica factory, where they are carefully selected and packaged. The mollusc has a thick, shiny, reddish-brown shell crossed by thin concentric stripes, while the fruit is white, with a robust red muscle. Very tasty, with a savoury flavour, the Adriatic cockles lend themselves to many seafood recipes, first courses in particular.
